Caciocavallo (3-4 month)
Our caciocavallo is made using the same exact process as our mozzarella. Always starting with pasteurized Jersey cow milk, the cheese is formed by hand and tied to hang for a few days.
It will dry and become a yellow-gold color when ready to be enjoyed.
